The term 'zero waste' in food service usually generates one of two responses: enthusiasm followed by the realisation that it is more complex than expected, or scepticism that it is achievable at all in a commercial kitchen environment.
The truth sits between these reactions. Zero-waste kitchen operations are not currently achievable in the absolute sense for most food businesses. But zero-waste as a direction — a consistent set of choices that progressively reduce packaging waste toward landfill and increase the proportion that is composted or recycled — is very achievable. And it starts with packaging.
The first step in a zero-waste kitchen transition is a packaging audit — mapping every packaging input to the kitchen against its function, material, volume, and current disposal pathway. Most kitchens are surprised by how many packaging items they use that are neither necessary nor difficult to replace.
The single most common finding in a kitchen packaging audit is that a significant proportion of packaging waste comes from items that could simply be eliminated — cutlery that goes unused, bags that are not needed, packaging formats that create waste without adding value.
Zero-waste packaging is only meaningfully zero-waste if the compostable packaging actually goes to composting. This requires a composting partnership — a relationship with a commercial composting facility that will collect used compostable packaging along with food waste.
In major Indian cities in 2026, commercial composting facilities that accept certified compostable packaging are available:
A zero-waste kitchen requires a packaging supplier who can document the certifications, provide consistent quality, and supply the full range of compostable packaging needed. A kitchen running compostable plates but plastic cutlery because the sustainable alternative was not available is not a zero-waste kitchen — it is a kitchen with good intentions and a supply chain gap.
At Prakritii, we supply the full range of compostable food service packaging — containers, plates, cutlery, cups, bags — from a single supplier relationship, with the certifications needed for composting facility acceptance and EPR compliance documentation.
A zero-waste kitchen is not built in a day. It is built one packaging decision at a time, consistently.
